Tough waking up this AM.  I think that lazy, stay at home days make this homely act more difficult the next day.  Didn't manage to do that much of note yesterday.  Watch a lot of football (the real kind) and worked on the recipe below. 

This week will be entertaining because of how few folks will be around at work.  Luckily, this few will have a low census of patients available to pawn off on the younglings. 


Screed/Recipe

Today is just the detailing of an experiment.  Since I am in the process of deciding the components of my diet, I have to figure out what I can do to make something palatable out of a low-meat diet.  So today's work is done while watching the Browns/Ravens game while working out the recipe for low-meat, no meat pseudo sausages. 

First component is a 2.5 ounce package of dried mushrooms from the asian store.  I re-hydrated them overnight by bpouring boiling water on them and leaving them overnight.

In the morning, I chopped the re-hydrated mushrooms fine and started them sauteing in a couple of tablespoons of corn oil (olive oil is for dressings and finishing) chop up a medium red onion and four or five cloves of garlic.  Saute that whole mess up.  While the bulk matter is sauteing, add the following.
  • 1 tablespoon salt
  • 1.5 teaspoons celery seed
  • 2 teaspoons fennel seed
  • 2 teaspoons black pepper
  • 1.5 tablespoons smoked paprika
  • 1 tablespoon crushed red pepper
  • 0.5 teaspoon allspice
  • quarter cup tomato sauce
  • 1/3 cup finely diced walnuts
Saute for about 15 minutes.  You have to cook the mushrooms for a bit, they are notoriously tough

add 1/3 cup red wine and deglaze the mess.  Put the stove on low and slow cook for 30 minute while watching the game.

One Green Gummi and One Yellow gummi consumed at this time

Weigh out 180 grams of lentils and 140 grams of quinoa.  Bring to a boil in 340 grams of water with some soy sauce and dried chicken bouillon and then reduce and cook for 15 minutes and add to the mushroom mess.  Let sit covered until cool.

When that mess has cooled, whisk together
  • 3 eggs
  • 2 tablespoons cornstarch
  • half cup of flax-based flour
Stir this into the mess above.  Take out approx 1/2 cup, roll into a sausage shape using cling wrap to keep the shape and steam for 20 minutes.
Stick into the fridge and wait an hour for it to firm up.

At this point pour self well deserved glass of red wine and write out recipe.   Then go back to watching game

Test One Results

Looks like a finely shaped turd..  Doesn't taste too bad, little on the salty side.  Texture a little soft and crumbly, but does hold together after an hour. 

Test Two

Well, gonna repeat the process.  See what letting it sit for an hour or so prior to making the faux sausage.  Forms up better, this time I will let steam for around 25-27 minutes.
 
The uncooked sausage still looks turd-like.  But seems more rounded than flattened.  Aesthetically more pleasing, but not by much

Test Three

OK, this time a thinner sausage.  I am going with approximately fat hot dog thickness.  I am going to go with 25 minutes and a thinner sausage.

Test Four

Added another egg and around a half cup of parmesean and stirred in to remainder of sludge.  Going with 25 minute stream. 

Results:

OK: We are onto something.  Very nascent at this point.  But I am thinking that, with a little work, this could be dandy, nutritious and cheap.

OK, Gonna spend a couple of days eating the experiment.  Overall, a qualified success.
